This Pinot Noir comes from one of the few vineyards in Alto Adige which is dedicated to this very specific variety. The exposure to the West ensures a lot of sun in the evening. During the night the cold winds from the Dolomites cool down the vineyards, what is very important for the elegance and intense aromatic profile of this wine.

Vinification
Maceration of the skins for 8-10 days at max 30°C with frequent pumpings over. and total alcoholic fermentation in stainless steel tanks.

Aging Process
12 months in French oak barrels of 2,25 hl and 6 months in wood casks of 11 – 25 hl; 6 months in the bottle before the release.

Tasting Notes
Color: Ruby red
Bouquet: On the nose it shows notes of sweet red fruits, herbs and tobacco
Flavor: On the palate it is an excellent definition of the elegance of this variety, full of fruity aromas of dried blackberry, cherry, figs and prune. Fine texture, wrapped in silky tannins and a long, polished finish
Pairings: Ideal with white meat such as veal or chicken, and also with fish and light cheeses
