Vinification
Manual harvest in September followed by maceration for 10-12 days in stainless steel using natural yeasts at a controlled temperature of 79°F, malolactic fermentation in glass-lined cement tanks

Aging Process
14 months in cement tanks with glass lining, six months in the bottle

Color: Ruby red with violet notes
Bouquet: Intense with notes of blackberry, cherry and currants with spice hints of aromatic herbs
Flavor: Refined and compact with elegant tannins
Pairings: Ideal with ox, lamb, rabbit, roasted poultry and mediumaged cheeses
