Grillo, much like Catarratto, is one of the great white wine varietals native to Sicily. While both of these varietals are known for their good structure, Grillo does not have as much acidity as its Catarratto sibling. Grillo is cultivated in a variety of soils, but thrives most in microclimates that are well-ventilated.
