Harvested by hand; once destemmed, the grapes are macerated on their skins at a controlled temperature for ten days, and both fermentation and malolactic fermentation take place at a controlled temperature inside stainless steel tanks where the wine remains until it is bottled.

8-9 months in stainless steel and 4 months in the bottle before the release
