Vinification
Cold maceration at 12 °C for 12 days. Fermentation in stainless steel tanks.

Aging Process
Five months on lees in stainless steel with frequent battonage, cold-stabilization, clarification and filtration before bottling. Three months in the bottle before the release.

Tasting Notes
Color: Straw yellow with greenish highlights
Bouquet: Notes of white peach, green peppercorn and pleasant sage hints
Flavor: Dry and full-bodied with great minerality
Pairings: Excellent aperitif; ideal with fish dishes, white meats, charcuterie and soft cheeses
