Cantele deftly cultivates this late-ripening, native varietal to ensure that the final wine is ­balanced without overbearing alcohol levels, a peril of winemaking in hot climates. While this wine can be enjoyed immediately, it also has the structure and depth to age for 3-4 years.

Vinification
The grapes are harvested at the end of September and are subsequently ­de-stemmed, crushed and macerated on the skins for approximately 10 days; fermentation using selected yeasts is carried out at 77°F; malolactic fermentation

Aging Process
Aged a minimum of 24 months: 6-12 months in second and third use barriques; the rest of the time before and after barrique aging, the wine refines in stainless steel tanks

Tasting Notes
Color: Ruby red with garnet streaks
Bouquet: Notes of candied fruits and spices the transition to ­underbrush, tea and amber hints
Flavor: Tannins and acidity find a pleasant balance
Pairings: Pairs well with roast veal, lamb, game and ripe cheeses
