The Scamperle family has cultivated vineyards for generations. Le Salette currently consists of 49 acres in the best areas of the Valpolicella Classico. This wine lends itself to being aged for even 8-10 years or longer as its flavors continue to evolve.

Vinification
Grapes are dried for three months before pressing. Fermentation in stainless steel at a controlled temperature of 64-77°F for 35 days using natural yeasts; malolactic fermentation in barrique

Aging Process
24 months in French oak barriques. 6 months in the bottle before the release

Tasting Notes
Color: Ruby red with garnet reflections
Bouquet: Intense nose of mature fruit and spices with notes of ripe cherry, pepper, nutmeg and tobacco
Flavor: Harmonious, round and elegant with great balance between alcohol noble tannins
Pairings: Excellent with grilled, boiled or roasted meat and aged cheese. Ideal also with Risotto “isolana” (with pork) and meat lasagna.
