The Scamperle family has cultivated vineyards for generations. Le Salette currently consists of 49 acres in the best areas of the Valpolicella Classico. This wine is only made in the best vintages. This wine has an aging potential of over 10 years.

Vinification
Grapes are dried on tables in a well-ventilated area for six months, fermentation in stainless steel using natural yeasts at 64-68°F for 90 days.

Aging Process
12 months in French oak barriques + 18 months in clay amphorae. 6 months in the bottle before the release

Tasting Notes
Color: Ruby red with cyclamen accents
Bouquet: Dry fruit, forest floor with blueberry and violets gives way to hints of blackberry jam, cacao and tamarind syrup
Flavor: Delicately sweet with balanced tannins, deftly balances sugar and acidity which gives a long finish while maintaining its freshness
Pairings: Ideal with dry pastries, almond, hazelnut cake, cookies, chocolate, “Sbrisolona” cake (traditional crunchy tart). Excellent with cheeses or as meditation wine
