Inspired by the classic Bordeaux style of Cabernet Sauvignon. Only done in exceptional vintages for Cabernet Sauvignon. This very limited wine was not made in the 2008 or 2009 vintages. 2007 was the first vintage of this cuvée.

Free run juice from hand-harvested grapes is cold soaked for 10 days in 2,500 L cement tanks. Fermentation for three weeks using natural yeasts. Frequent manual plunging. Gravity fed into new French oak barrels from the finest coopers in France. Malolactic fermentation for three months. No battonage. No filtration.
Aged 18 months in new French oak barrels.
