Grapes are handpicked in small containers in order to reduce skin breakage. After being gently destemmed and softly pressed, free run juice is chilled and left on the skin for less than 24 hours (salasso tecnique). Fermentation in stainless steel tanks at controlled temperature of . 15-17°C for 15 days.
