Grapes are handpicked in small ­containers in ­order to reduce skin breakage. After being gently ­destemmed and ­softly pressed, free run juice is chilled and left on the skin for less than 24 hours (salasso tecnique). ­Fermentation in stainless steel tanks at ­controlled ­temperature of . 15-17°C for 15 days.
