This reserve was realized as a celebration of Fossacolle’s 10th anniversary. Created from ­Sangiovese grown in the estate’s oldest vineyard, this reserve is only made in exceptional vintages.

Vinification
The grapes were hand harvested in crates, de-stemmed and put in cement vats and steel tanks, where it began a cold pre-fermentation for the first 5 or 6 days. After that,began the alcoholic fermentation at controlled temperature (30-32 C degrees), the natural yeast led the first part of the process, and the selected yeast led the second one in concrete vats. During the vinification process they alternated pumping over, punching down the cap, with some delestage during the maceration phase. The racking was done after 22 days from the harvest. The Wine was transferred in cement vats, where he conducted the malolactic fermentation.

Aging Process
At the end of this process the wine was transferred in the ageing cellar, where temperature and humidity are controlled. Here it stayed for 24 months in french oak barriques of 225 litres of second use. After the ageing period the wine has matured for another year in glass-lined cement vats. No filtration. 18 months in the bottle before the release.

Flavor: Complex structure and tannins with notes of fruit and coffee; long, elegant finish
