Zibibbo is a native variety of Sicily that was historically used to make fortified wines. In a modern twist, Ceuso uses modern winemaking technology to make a bright, dry expression of this traditional grape.

Vinification
Static decantation of must after destemming and soft pressing; fermentation in stainless steel at a controlled temperature of 57°F for 20 days using selected yeasts

Aging Process
In stainless steel vats on its fine lees for seven months, three months of bottle refinement

Color: Straw yellow
Bouquet: Intense floral nose over a background of citrus, mature melon and honey notes
Flavor: Welcoming wine with great balanced and structure, long, aromatic finish
Pairings: Ideal with fish appetizers, seafood, crustaceans and smoked fish
