During the Middle Ages, Gaiole was an important market place, developed along the road for Valdarno. The numerous castles and parish churches in the area bear witness to an intense and prosperous agricultural and commercial activity. Among the castles, is the Castello di Meleto with its two majestic rounded angular towers. DOC rules require that vin santo age for at least three years, however Castello di Meleto ages its vin santo an additional year or two to give it a more complex character.

Harvest and selection by hand; grapes are naturally dried in well - ventilated rooms followed by fermentation and aging in barrels of different woods, which are sealed and kept in rooms with shifting temperatures

Bouquet: Typical nose of dried fruits, honey, apricot, with notes of vanilla and spices
Flavor: Full and velvety, great structure and roundness. Long and persistent finish with a hint of well-balanced acidity
Pairings: Cold as an aperitif, at “room temperature” as a dessert wine, excellent with almond biscuits “cantuccini”.
