Vernaccia di San Gimignano Riserva, thanks to its unique characteristics and the oak fermentation, is a white wine intended for long aging (10-15 years). Great care is taken to harvest the Vernaccia only when it has achieved complete physiological ripeness. The harvest is done entirely by hand and careful selection takes place in the vineyards before the grapes are transported to the winery on dry ice in order to preserve freshness until pressing.

Cold maceration before the fermentation for 12 hours. Fermentation in in stainless steel tanks and 2nd passage French barriques for 15-30 days at 16 °C.
18 months in stainless steel vats of 20 Hl and 2nd passage French barriques. In the bottle 4 months before the release.

Bouquet: The nose is complex with floral, citrus, tropical fruits, mineral and spicy notes
Flavor: The sip is rich, well rounded, harmonic, balanced and elegant. Long pleasant mineral finish
Pairings: Excellent with fish and white meat. Perfect as an aperitif and with savoury antipasti.
