In collaboration with the University of Milano, Il Chiosso uses the “Lotta Integrata” approach in the vineyards, eliminating the use of insecticides in favor of natural pest management. In the winery, the use of additives and preservatives is limited, and inert gases such as nitrogen and argon are used throughout the winemaking process in order to capture as much nuance from the Alto Piemonte terroir as possible.

Vinification
Grapes are manually harvested; fermentation in stainless steel using natural yeasts at a controlled temperature of 86-89°F for 15 days, immediately followed by malolactic fermentation in stainless steel at 64-68°F

Aging Process
30 months in large French oak botti, nine months of bottle refinement

Color: Ruby red with garnet reflections
Bouquet: Intense notes of fresh fruit with an undertone of balsamic and spices
Flavor: Excellent structure with soft, balanced tannins
Pairings: Pairs well with red meats, game, fowl and aged cheeses
