Amarasco Cesanese Lazio IGT

The Amarasco Principe Pallavicini represents a gem in the wine scenario from Lazio and the most famous area of the Castelli Romani. The name Amarasco refers to the typical aromas of the Cesanese grape variety, the violetta flower and sour cherry, also called “amarasco” in Italian. This wine comes from some of the oldest Pallavicini vineyards, about 60 years old, mainly located in the Marmorelle section of the Colonna estate. The Marmorelle are the company’s historic vineyards, including a 50 year-old vine, still ungrafted, of a special ecotype of Cesanese grape selected locally. It is made with 100% various Cesanese clones, one the most important and traditional red grape varieties of this territory. The Cesanese is very sensitive to the soil and weather conditions of the area where it is grown, thus giving a wine with a very unique character.

After destemming, the must and the pulp undergo a maceration on the skins for about 12 days with frequent delestage. Fermentation takes place in stainless - steel tanks for 12 days at the controlled temperature of 26° C, followed by the malolactic fermentation

Aging Process
The wine ages in french oak tonneaux of 500 l for 12 months and, after bottling, for further six months in the cellar

Color: Deep ruby red colour with hints of garnet
Bouquet: The broad, ethery nose has typical notes of nutmeg, red rose and spicy nuances
Flavor: The palate has great thrust but is balanced and mouthfilling, with a long finish
Pairings: Red meat, hard-paste cheese; also a superb meditation wine
