Monte De Toni Soave Classico DOC
The Monte De Toni is made with 100% indigenous grape Garganega. The appellation “Soave Classico” is reserved for the wines produced in the historical sites of the Soave DOC. This wine comes from some of the oldest I Stefanini vineyards, ranging up to 70 years old, located in the hills around Monte Tenda Castalunga village. In this area the soil is a volcanic red, rich in iron oxides. The name “Monte De Toni” is an homage to the cropper who took care of this land before the Tessari family.

Hand-harvested grapes are softly pressed and fermented for 8/10 days at 15,5 °C in stainless steel vats of 100 Hl.

Aging Process
The wine is left to refine on noble lees for five months and 2/3 years after bottling.

Tasting Notes
Color: Bright straw yellow colour with greenish reflections.
Bouquet: On the nose it is intense, revealing its mineral personality deriving from the volcanic Soave Classico soil, together with fruity notes of peach, apricot, yellow plum and medlar.
Flavor: The mouth is firm, full, rich, and perfectly balanced between freshness and smoothness. Long lasting sip with the typical Garganega almond aftertaste.
Pairings: Best served with first courses, like pasta, soup or risotto with fish and vegetables. Ideal also with shellfish and white grilled meat or with fresh and medium aged cheeses, like Grana Padano and Taleggio.
