Vinification
Handpicked and hand-sorted, Cluster pressed; settled in tank for 48 hours, Racked to stainless steel tank; fermented at 50 degrees F. Post fermentation: racked, filtered and bottled.

Tasting Notes
Color: Color is a very pale straw and crystal clear.
Bouquet: On the nose, aromas of bright citrus fruits dominate, along with wet grass and lemon rind.
Flavor: A mouth-watering acidity on the palate gives way to grapefruits, herbs and lime rinds.
Pairings: Shrimp dishes (Grilled Shrimp, Shrimp Tacos, Lemon-Basil Shrimp Pasta), Chicken Salads (Tangy Lemon Cucumber Chicken Salad or Chipotle Chicken Salad) Thai and Indian foods (Curry) and Fresh Burrata.
