Parchitello Bombino Nero Rosato Castel del Monte DOCG

This wine is made with 100% Bombino Nero, a native grape from Puglia. This grape is very high in phenolics, particularly anthocyanins, which has the potential to produce wines with a deep color. For this reason Bombino nero is often used in rosé production as it can quickly color the juice without requiring a long period of skin contact. Parchitello is the name given by the Ceci family to the parcel of land where the vineyard lie.

Short maceration on the skins for about 8 hours. Fermentation takes place in stainless - steel tanks at the controlled temperature of 12 - 15 °C

Aging Process
The wine is left to refine in stainless - steel tanks for 6 months and 2 months in the bottle

Color: Coral rose color
Bouquet: Intriguing juicy nose of red rose, wild strawberry, raspberry, black cherry and cherry soft candy
Flavor: On the palate it is complex and aromatic, rich, fresh, and perfectly balanced. An eleant rosè and a perfect expression of the Murgia territory, north of Bari.
Pairings: Excellent with legume based dishes, vegetable parmigiana, fish and white meat.
