The Castel del Monte DOC appellation takes the name from the famous castle built in honor of Emperor Federico II on a hill inside the Alta Murgia National Park, in the territory around Andria. The DOC was established in 1971. Parco Grande is the name given by the Ceci family to the parcel of land where the vineyard lies

After destemming, the must and the pulp undergo a maceration on the skins for about 15-18 days with frequent delestages. Fermentation takes place in stainless - steel tanks at the controlled temperature of 25-26 °C

Aging Process
The wine ages in stainless - steel tanks for 2 months, and, after bottling, for further 3 months in the cellar

Tasting Notes
Color: Bright ruby red color
Bouquet: Intense and complex nose with fruity notes of bitter orange and cherries under alchool, together with spicy sensations of cinnamon and fresh hints of mint
Flavor: A velvety rich sip with a pleasant smooth finish
Pairings: Ideal with legume soups, pasta with ragu sauce, lasagna, meat and aged cheeses
