After destemming, the must and the pulp undergo a maceration on the skins for about 24 days with frequent delestages. Fermentation takes place in stainless - steel tanks at the controlled temperature of 28 °C

Aging Process
The wine ages in french oak barriques for 14 months, and, after bottling, for further 12 months in the cellar

Color: Bright ruby color
Bouquet: The nose is intense and complex, with notes of dry flowers and spicy dark sensations of rhubarb, cloves and Indian Ink
Flavor: Gentle on the palate with a smooth tannin and a long pleasant finish reminiscent of the Pugliese Mediterranean scrub
Pairings: Ideal with rosted meat, ragu sauces, legume soups, and aged cheeses
