The top label, “le grand vin” following the Bordeaux classification, the highest expression of the Italian-French project. Produced from the first vines to be planted at Rocca di Frassinello, Baffonero was created in order to compete qualitatively with the great wines of Maremma. This wine takes the name of the vineyard in which the Merlot is cultivated.

Maceration on the skins with frequent delestages and pumpings over for 20-25 days. Fermentation using natural yeasts in stainless steel vats for 15-20 days at a controlled temperature of 27°C.
14 months in 225 L French barriques, followed by 2/3 months in concrete vats for stabilisation. No filtration; 12 months bottle refinement
