Rocca di Frassinello

The top label, “le grand vin” following the Bordeaux classification, the highest expression of the Italian-French project. Produced from the first vines to be planted at Rocca di Frassinello, Baffonero was created in order to compete qualitatively with the great wines of Maremma. This wine takes the name of the vineyard in which the Merlot is cultivated.

Vinification
Maceration on the skins with frequent delestages and pumpings over for 20-25 days. Fermentation using natural yeasts in stainless steel vats for 15-20 days at a controlled temperature of 27°C.

Aging Process
14 months in 225 L French barriques, followed by 2/3 months in concrete vats for stabilisation. No filtration; 12 months bottle ­refinement

Tasting Notes
Color: Deep ruby red
Bouquet: Concentrated dark fruit notes, especially blackberry and blueberry, roses and licorice are among the aromas and flavors that emerge from this great red
Flavor: Full bodied, rich with velvety tannins. Polish and supremely elegant personality. Lingering aftertaste of sweet fruit, spice and tobacco
Pairings: Ideal with long-cooked meat dish, barbecues. Delicious with aged cheeses
