Mezcales Milagrito was founded in 2005 in Santiago Matatlán, Oaxaca, one of the historic centers of mezcal production. The project was created by producers with a strong commitment to traditional mezcal-making and to preserving the knowledge passed down through generations.
Soil
The company is rooted in Santiago Matatlán, Oaxaca, and emphasizes the relationship between the agave plant, the land, the campesino, the maestro mezcalero, and the finished product. The agaves grow in land free from agrochemicals.
Cultivation
Milagrito produces mezcals using different agave varieties, including cultivated and, for special limited collections, wild agaves. The company emphasizes respecting the natural time required for an agave plant to grow from seed to harvest.
Production
The Palenque in Santiago Matatlán is where the production takes place. The traditional process includes: agave hearts cooked in an underground earth oven; crushing with a traditional stone mill; natural fermentation in wooden vats, using well water; distillation in copper stills; a second distillation to obtain greater alcoholic strength.
Distillery
Milagrito combines traditional production methods with technological improvements intended to reduce environmental impact. The distillery has replaced firewood with gas for distillation, uses passive temperature-control technologies, and has a rainwater storage system that recirculates water used in the cooling system. These measures reduce wood consumption, emissions, and water waste while maintaining control over the production process.
Philosophy
The company’s philosophy centers on preserving artisanal mezcal production and the knowledge transmitted from generation to generation. Milagrito's approach is deliberately opposed to excessive industrialization, with production kept limited to respect the natural rhythms of the agave and the production process.
Master mexcalero
Guillermo Abad Hernández, a partner at Mezcales Milagrito and a maestro mezcalillero, is described as a defender and promoter of artisanal mezcal culture and traditional production methods.
