Puntamora Lambrusco Grasparossa di Castelvetro DOC

The grapes for Puntamora are harvested in late October in order to obtain the ripest grapes possible. The Ancellotta are cut in mid-September, but left to dry on the trellising wires before vinification. This wine can be enjoyed young, but it shows best after a couple of years of aging

Vinification
Maceration on the skins for seven days at a maximum of 78°F in stainless steel

Aging Process
In stainless steel for 7-10 months followed by ‘prise de mousse’ using the Charmat method

Tasting Notes
Color: Brilliant and intese vermilion with purplish highlights
Bouquet: Attractive vinous, reminiscent of ripe morello cherries and wild berries
Flavor: Full and well-balanced; sweetness of the fruit is counterbalanced by the gentle tannins, leaving the plate pleasingly dry
Pairings: Perfect with sweet focaccia, tarts and cookies; it pairs well with pumpkin pasta dishes, young Parmigiano Reggiano and other mild cheeses
