In Valle d’Alpone area, the heart of the Soave region, fossil finds prove the presence of the first European wild vine, 40 million years ago. The I Stefanini Selese is a Soave DOC made with 100% indigenous grape Garganega. The vineyards are located in the foothills of Monteforte d’Alpone village. The name “Selese” refers to an old site where wheat was harvested and dried.

Vinification
Hand-harvested grapes are softly pressed and fermented for 8/10 days at 15,5 °C in stainless steel vats of 100 Hl.

Aging Process
The wine is left to refine on noble lees for 4/6 months and 12 months after bottling.

Tasting Notes
Color: The colour is straw yellow with greenish reflections.
Bouquet: On the nose it is delicate and flowery, with notes of elderberry and hawthorn, together with juicy sensations of ripe peach, apricot and tropical fruits.
Flavor: On the palate it is dry, medium-bodied and smooth with a pleasant long mineral finish.
Pairings: Best served with lighter first courses, white meat and vegetable recipes, fish and shellfish dishes. An excellent pairing with the traditional Venetian fish soup and risotto.
