Hayes Valley Wines are grown and produced at Clos LaChance Estate Vineyards and Winery in the Northern Central Coast. Clos LaChance was one of the first 17 certified sustainable wineries and vineyards in California. Vineyard Location: Northern Central Coast, California

Handpicked and hand-sorted; De-stemmed to closed top tanks. Cold soaked for 72 hours, inoculated and pumped over 3 times a day during peak fermentation. Post fermentation, pressed off skins and barreled down.

Aging Process
60% French Oak, 40% American Oak

Tasting Notes
Bouquet: Opens with aromas of bright red cherry and ripe strawberry. Subtle undertones of dried spices and green tea leaf. Light hints of creamy vanilla, sweet oak and nutmeg round out the nose.
Flavor: Fruit forward juicy entry with a nice tight frame to carry it through the pallet. A fleshy mid pallet of light oak flavors compliments the soft and elegant tannic structure. The finish brings back the fruit, with a nice blueberry and and currant note
Pairings: This wine would pair great with Beef dishes (Grilled Flank Steak or a Beef Brisket Pot Roast) or Lamb dishes (Rosemary Braised Lamb Shanks or Roasted Rack of Lamb).
