Climate
Roverè della Luna benefits from a microclimate shaped by the Dolomites, Lake Garda, and the Alps.
Its cool, breezy climate with temperature swings is ideal for white and red grapes that require acidity and aroma, enhancing the wines’ freshness and elegance.
Soil
Soils vary by grape-growing area. In Roverè della Luna, soils are deep, gravelly, and well-drained, making them ideal for Pinot Grigio and Traminer. Elsewhere, soils are alluvial and calcareous, suitable for many varieties. The Rotaliana Plain has predominantly alluvial, fluvial soils rich in gravel, sand, and pebbles, which drain well and support mineral-rich, structured wines.
Vineyards
Gaierhof collaborates with 100 winegrowers who manage 420 acres in Trentino Alto Adige’s DOC region, selecting grapes from micro-terroirs at 787-2296 ft. They source from Val di Cembra (Müller Thurgau), Piana Rotaliana (Teroldego), Colline Avisiane (Nosiola, Pinot Nero), and Vallagarina. Key varieties include Pinot Grigio, Chardonnay, Sauvignon Blanc, Gewürztraminer, Müller Thurgau, Teroldego Rotaliano, Pinot Nero, and Lagrein.
Cultivation
Gaierhof practices sustainable viticulture, collaborating with grape growers to ensure eco-friendly farming that protects vine health. They use natural methods, integrated pest control, and traditional training systems such as Trentino pergola and Guyot. Pheromone traps and roses help control pests and safeguard the vines.
Winery
The modern winery uses advanced winemaking technology to preserve grape aromas and minerality.
Fermentation occurs in temperature-controlled stainless-steel tanks, yielding fresh, fruity wines in both whites and reds. Some wines are aged in oak barrels of various sizes, depending on the wine type.
Family
Gaierhof, run by the Togn family, is a historic, family-owned winery in Trentino that produces about 800,000 bottles annually. The Togns also own Maso Poli and are known for tradition and land stewardship. Sisters Romina, Valentina, and Martina Togn lead with passion, blending history with modern winemaking.
Winemaker
