Estate
Tucked among Mediterranean forests, the 50-acre La Cerbaiola estate offers views of the breathtaking Val d’Orcia.
Giulio Salvioni and his wife, Mirella, built upon his father’s winemaking tradition by establishing a winery that produces limited amounts of exceptional Brunello di Montalcino.
The first vintage was in 1985.
Climate
In Montalcino, summers are short, warm,
and mostly clear, while winters are long,
very cold, and partly cloudy.
Temperatures typically range from 31°F to
87°F and are rarely below 21°F or above
94°F.
Soil
Three vineyard plots span 10 acres, each featuring distinct characteristics: soils vary from marly limestone to stony.
Vineyards
The vineyard is divided into three plots of varying ages, ranging from the oldest, approximately 30 years old, to the two most recent, 15 and 10 years old.
The vineyards are situated approximately 1,443 feet above sea level, facing south-east towards the hill of Montalcino.
They are well ventilated and enjoy an excellent microclimate.
Cultivation
All work in the vineyard is carried out traditionally, with short pruning to obtain very low yields, from 25 to 35 quintals per hectare, and selective harvesting strictly by hand.
Winery
After the harvest, fermentation and racking take place in 40-hl steel tanks at the Cerbaiola winery, situated near the vineyards. Once malolactic fermentation is complete, most of the aging takes place in 20-hl Slavonian oak barrels in the cellar, located in the historic center of Montalcino, directly below the residence. In the next stage, the wine returns to the countryside for bottling and matures further in bottles stored under the house, in the village cellar.
Family
The agricultural doctor Umberto Salvioni made wine for friends to share good times.
His son, Giulio, expanded the circle by creating a winery with his wife, Mirella, producing limited but excellent wines. Later, Davide, with an agriculture degree, took over the winery, and his sister Alessia joined in marketing and administration.
Winemaker
Attilio Pagli, born in Empoli in 1962, graduated from the University of Siena in 1983 and immediately began his career in the wine industry. Today, with nearly 40 years of experience, he collaborates with over 30 companies across Italy and South America.
