An extension of the renowned institute, the winery of San Michele is located in what was once an Augustan monastery in the 12th century. Expanded over the course of the last 20 years, the winery today features modern enological technology that is dedicated to the production of indigenous varietals like Lagrein that represent the unique history of winemaking in Trentino.

Grapes are hand harvested in the second half of September; grapes are cold pressed and undergo traditional white wine vinification with brief maceration; part is fermented in stainless steel, part in barriques

Aging Process
On the lees for 6 months, 70% in stainless steel tanks and 30% in barriques. 2 months in the bottle before the release

Tasting Notes
Color: Straw yellow
Bouquet: The nose shows lively typical aromas of the grape variety, such as passion fruit, cirtus, peach, tomato leaf.
Flavor: On the palate it is well-balanced and well- structured with a pleasant acidity and minerality, and varietal after taste
Pairings: Suitable for asparagus, seafood appetizers, fish and white meats
